I have definitelly fallen for the smoothie bowl mania, there are periods when i have it every single day for breakfast.
This particular recipe is a little throw back to the amazing times in Weligama, the surfers paradise in Sri Lanka. Right, it is easy to prepare this recipe with fresh tropical fruits directly from the market, but you can recreate this bowl anywhere, use frozen fruits, they do not lose any of their benefits and they even add some extra texture and ice-creaminess.
Meat from 1 coconut and a little bit of coconut water (can be replaced by coconut cream)
1/2 small fresh Beetroot
1/4 of Avocado
Place all of the ingredients into a blender or food processor.
Pulse until smooth.
